  1. 4 baking potatoes

  2. 1 teaspoon olive oil

  3. 200 g pot soft low-fat cheese

  4. 2 stalks celery , thinly sliced

  5. 1 small red onion , halved and finely sliced

  6. 1 cox's apple , cored and chopped

  7. 50 g walnut pieces

  1. Prick the potatoes with a fork and sit them on a microwaveable plate.

  2. Rub the skins with the olive oil, and sprinkle with some sea salt if you like.

  3. Microwave on High for 8 mins until soft in the centre.

  4. Leave to cool while you prepare the topping.

  5. Mix the soft cheese, celery, onion, apple and half of the walnuts; season to taste.

  6. Cut the potatoes open.

  7. spoon on the topping 8 sprinkle with the remaining walnuts.
