  1. 1 large yellow onion, diced

  2. 4 cloves garlic, crushed

  3. 4 tbsp chopped cilantro, divided

  4. 1 cup queso

  5. 2 cups chicken, cooked and diced

  6. 1 can cream of chicken soup

  7. 3 cups cooked rice

  8. 1 cup salsa

  9. 1/2 cup grated cheese, either cheddar or Monterey Jack

  10. 1 can diced green chiles

  11. 2 tbsp vegetable oil

  12. 2 tbsp taco seasoning

  1. Sauté onion in oil until slightly browned; add garlic. Add chicken, half the cilantro, green chiles, salsa, queso, chicken soup, and taco seasoning. Mix together until heated through and then fold in rice and pour into greased 9 x 13 cake pan or large casserole dish. Sprinkle grated cheese and the rest of cilantro on top and bake for 30 minutes at 325 degrees until cheese melts and casserole is bubbly. Serve with warm tortillas.
