  1. 1 tablespoon Thai Zest and juice of

  2. 1 1 tablespoon rice-bran

  3. 500 g chicken, roughly

  4. 2 capsicums, roughly red

  1. Mix the Thai seasoning, lime zest and juice and rice-bran oil in a shallow bowl.

  2. Roll chicken in the spice mixture and allow to marinate in the fridge for 20 minutes, or longer if preferred.

  3. Thread chicken, capsicum and onion onto soaked bamboo sticks.

  4. Cook slowly on a preheated BBQ.

  5. Serve with a salad of choice.
