  1. 1 1/2 cups boiling water

  2. 1 (6-ounce) package sparkling white grape or wild berry flavor gelatin

  3. 2 cups seltzer or club soda, cold

  4. 1 (11-ounce) can Mandarin orange segments, drained

  5. 1 cup strawberries, hulled and sliced

  1. In a large bowl, pour boiling water into gelatin and stir for at least 2 minutes until completely dissolved. Stir in cold seltzer. Refrigerate 1 1/2 hours or until thickened. Stir in oranges and strawberries. Pour into 6-cup mold. Refrigerate 4 hours or until firm. Unmold on lettuce-lined platter. Garnish with edible fresh flowers. Store any leftover gelatin mold in refrigerator.
