  1. Proscuitto and Mascarpone Pinwheels

  2. Serves 6 2 oz proscuitto, sliced thinly but evenly

  3. 4 oz mascarpone cheese

  4. 3 stalks of scallions, finely chopped

  5. 1 red bell pepper, seeded and finely chopped

  6. Slightly beat the mascarpone so that it can evenly be spread. Add

  7. the chopped scallions, and pepper. Spread a piece of plastic wrap

  8. on a work surface. "Shingle" the proscuitto onto the wrap. Spread

  9. the mascarpone mixture evenly on top of the slices.

  10. Roll the proscuitto up jelly roll style and wrap tightly in the

  11. plastic wrap. Refrigerate until firm. To serve, unwrap the roll

  12. and slice. Notes: Excellent on toast points, crackers or pita chips. May be

  13. prepared ahead and refrigerated until ready to serve.
