    1. 1 cup cottage cheese

    2. 1/2 teaspoon lemon zest

    3. 1/3 cup lemon juice

    4. 1/2 teaspoon vanilla extract

    5. 3 egg yolks

    6. 2 cups half and half 3/4 cup sugar

    7. 3 egg whites

    1. Preparation : In blender or food processor, puree cottage cheese and lemon juice until smooth. Stir in pureed cottage cheese mixture. lemon zest, vanilla, and half and half; Set aside. In a medium bowl, beat egg yolks and sugar until smooth and thick. Set aside. In a medium bowl, beat egg whites until stiff but not dry. Fold into egg yolk mixture. Pour into ice cream canister. Freeze according to manufacturer's direction
