  1. 12 ripe figs

  2. 50g butter , cubed

  3. 50g walnut halves

  4. 4 tbsp maple syrup

  5. 200g mascarpone , mixed with

  6. 1 tsp vanilla extract , to serve

  1. Heat the oven to 200C/fan 180C/gas 6. Cut a cross into each fig about 3/4 of the way down so they fan out a little. Put a cube of butter inside each fig and put in a buttered baking dish.

  2. Scatter the walnuts over and drizzle with maple syrup. Bake for about 20 minutes, glazing with the syrup and butter. Serve 3 figs per person with a dollop of the vanilla mascarpone.
