  1. Spotted Dick

  2. 300 g plain flour

  3. 10g baking powder

  4. 150g shredded suet

  5. 75 g castor sugar

  6. 100g currants

  7. zest of a lemon

  8. about 150 ml milk

  9. Mix together all the dry ingred, Add enough milk to bind everything

  10. ot a dropping consistency. Roll into a sausage shape about 6 inches

  11. long. Wrap loosely in buttered greaseproof paper and steam for about an hour. Serve hot with fresh custard or ice-cream.
