  2. BLACKCURRANT MUFFINS

  6. 8 oz Plain flour

  7. 2 tb Wheatgerm

  8. 1 tb Baking powder

  9. pn Salt

  10. 3 oz Soft brown sugar

  11. 6 fl Milk

  12. 2 1/2 fl Corn oil

  13. 1 md Egg, Beaten

  14. 5 oz Blackcurrants

  15. 425F/Gas Mark

  16. 7. Line

  17. 12 deep bun or muffin tins with paper cake cases.

  18. Mix flour, wheatgerm, baking powder and salt together

  19. in a bowl. Stir in sugar.

  20. Gradually add milk, stirring constantly until all

  21. ingredients are moistened.

  22. Beat in oil and egg until you have a smooth batter.

  23. Stir in the blackcurrants.

  24. Spoon the mixture into paper cases, filling almost to

  25. the top.

  26. 18 to 20 minutes, until muffins are well

  27. risen, golden brown and springy to the touch.

  28. Leave to cool for a few minutes then lift out of tin.
