  8. 1/8 teaspoon Salt

  9. 2 teaspoons Butter or margarine

  10. 1/2 teaspoon Lemon rind -- grated

  11. 4 Pears; medium --

  12. 1 cup Flour -- unbleached

  13. 1/2 cup Almonds -- coarsely chopped

  14. 1/4 teaspoon Ginger -- ground

  15. 1/2 cup Corn syrup -- dark karo

  16. 1 teaspoon Lemon juice

  17. 1 Pie shell -- unbaked 9-inch

  18. topping--

  19. 1/2 cup Brown sugar -- firmly packed

  20. 1/2 cup Butter or margarine

  21. The pears should be pared and thinly sliced.

  22. There should be about 4 Combine the cornstarch, ginger and salt in a large

  23. bowl. Add the corn syrup, melted butter, lemon juice and lemon rind, stirring

  24. until smooth. Add the pears and toss until well coated with the corn syrup

  26. Topping and sprinkle over the pears. Bake in a preheated 400 degree F. oven

  27. 15 minutes, then reduce the heat to

  28. 350 degrees F. and bake an additional

  29. 30 minutes or until the topping and crust are golden brown. Cool on a wire

  30. rack. ALMOND TOPPING: Combine the flour, brown sugar, and ginger in a bowl. Cut in the butter, using a pastry blender, until crumbly. Stir in the almonds. - - - - - - - - - - - - - - - - - -
