  1. 2 1/2 cups 156g / 5 1/2oz All-purpose flour

  2. 1/4 cup 49g / 1.7oz Sugar

  3. 1 1/2 tablespoons 22ml Baking powder

  4. 1/4 teaspoon 1 1/3ml Salt

  5. 1/4 lb 113g / 4oz Plus 2 tbsp unsalted butter

  6. 1 cup 237ml Cold milk

  1. Recipe Instructions In a bowl, combine the flour, sugar, baking powder and salt; mix well, breaking up any lumps. Work the butter in by hand until the mixture resembles coarse cornmeal, making sure no lumps are left. Gradually stir in the milk, mixing just until dry ingredients are moistened. DO NOT OVER BEAT. Spoon the batter into 12 greased muffin cups. Bake at 350F until golden brown, about 35 to 40 minutes. The finished muffins should have a thick crust with a cake-like center.
