  1. 1 lb Chicken

  2. 2 ts Sesame oil

  3. 2 ts Sugar

  4. 3 sl Ginger

  5. 8 Dried chiles

  6. 4 Scallions

  7. 2 1/2 oz Peanuts

  8. 1 tb Rice wine

  9. 1 tb Cornstarch

  10. 2 tb Soy sauce

  11. Oil for frying

  1. Dice the chicken: marinate for 30 minutes in 1 tb soy, the cornstarch and rice wine.

  2. Cut the scallions into 1 in.

  3. pieces and the chiles in half (they are assuming you are using small ones).

  4. Heat the oil and deep fry the chicken dice for 2 minutes.

  5. Drain well.

  6. Reheat the oil and fry peanuts for 3 minutes.

  7. Drain.

  8. Heat a pan with 3 TB of oil and stir fry ginger, scallions and chiles.

  9. And chicken dice and stir fry for another minute before stirring in 1 tb soy and the sugar.

  10. Adjust the seasonings and stir in the peanuts.

  11. Serve sprinkled with sesame oil.

  12. [Note: I believe this recipe assumes the use of raw peanuts.

  13. If you are using roasted peanuts, omit the deep fry.
