  7. 1 tablespoon soft butter

  8. 1 egg plus

  9. 1 additional egg yolk

  10. 1/2 cup heavy cream

  11. pinch nutmeg

  12. 4 cups chicken stock used for soup broth

  13. Spray top of double boiler with cooking spray. Rub pan with butter

  14. Place eggs, cream, salt and nutmeg in small bowl and beat together with fork. Pour egg mixture into top of double boiler. Cook over hot ( but not boiling)
