  1. 1 dozen large shrimp, peeled and deveined Juice of

  2. 1/2 lemon

  3. 1 tbsp. prepared horseradish

  4. 1/2 cup ketchup

  1. Place the shrimp around the edge of a microwave-safe casserole with the tails pointing toward the center. Drizzle with the lemon juice and cook on high for two to three minutes. Remove them from the microwave, cover tightly, and allow to stand for two minutes. Chill well. Meanwhile, combine the horseradish with the ketchup. Serve the chilled shrimp with the cocktail sauce. Makes 2 to 4 servings.
