  6. 1/2 lb Dried Pinto Beans

  7. 1/2 c Chopped Smoked Ham

  8. 1 c Chopped Onion

  9. 8 oz Can Passata

  12. 1/4 c Packed Brown Sugar

  13. 1 t Chilli Powder

  14. 1/2 ts Salt

  15. 1/2 ts Dry mustard

  16. Rinse beans. In a large saucepan combine beans and 4

  17. cups water. Bring to the boil; reduce heat, simmer for 2 minutes. Remove from heat. Cover and let stand for hour. (or, skip boiling the water and soak beans

  18. overnight.)

  19. drain and rinse beans. In the same pan combine beans

  20. and 4 cups fresh water. Bring to the boil; reduce

  21. heat. cover and simmer for about 75 minutes or until

  22. beans are tender, stirring occasionally. drain beans,

  23. reserving liquid. In a 2-pint casserole, combine

  24. beans, ham and onion. stir together half a cup of the

  25. bean liquid, passata, chilli peppers, brown sugar,

  26. chilli powder, salt and mustard. Stir into bean

  27. 325F/Gas Mark

  28. 3 oven

  29. for about an hour. Uncover and bake for about 45

  30. minutes or more to desired consistency.
