  1. Peach Cobbler

  2. 8 Servings 6 c very ripe fresh peaches, sliced

  3. 1/2 c butter

  4. 1 1/2 c sugar

  5. 1 tb cornstarch

  6. 1 ts lemon juice

  7. 1 1/4 ts cinnamon

  8. 1 ts vanilla

  9. pie crust

  10. 1/8 cup sugar and 1/4 teaspoon cinnamon.

  11. 400 degrees. Places peaches and 1/4 cup of the

  12. butter in a large saucepan over medium heat. In a small bowl,

  13. combine sugar and cornstarch or flour and add to peach mixture.

  14. Stir in lemon juice, cinnamon and vanilla, add these after the

  15. peach filling has boiled. Stir constantly until mixture comes to

  16. a full boil. Reduce heat and simmer on low 10-15 minutes, or until

  17. peaches are a darker yellow in color and very tender. Pour hot

  18. mixture into a 9 x 12 inch casserole dish. Roll out pastry dough,

  19. cut into 1/2 inch wide strips and crisscross, inter- weave for a

  20. lattice-type crust, over hot peach mixture. Sprinkle with cinnamon

  21. sugar and dot crust with slices of remaining 1/4 cup butter. Bake

  22. 15 minutes and serve warm.
