  1. 1 (10-ounce) package frozen slice yellow squash

  2. 2 large eggs, beaten

  3. 1/2 cup cracker crumbs

  4. 1/4 teaspoon pepper

  5. 1 small onion, finely chopped Vegetable oil

  1. Cook squash according to package directions; drain and mash. Combine squash and next 4 ingredients. Pour oil to a depth of 2-inches in a deep-fat fryer or heavy saucepan; heat to 375°F (190°C). Drop squash mixture by tablespoonfuls into hot oil (do not crowd pan); fry until golden brown, turning once. Drain on paper towels. Serve immediately.
