  2. PASTA WITH WHITE TRUFFLES, OLIVE OIL, PARMESAN, AND BASIL

  6. 1 cup Dark Green Extra Virgin

  7. Salt

  8. Freshly Ground White

  9. 3 tablespoon Dark Green Extra Virgin

  10. Pepper

  11. Olive Oil

  12. 1/4 cup Freshly Grated Reggiano

  13. 1 Angel Hair Pasta For Parmesan Cheese

  14. 2 ounce Fresh White Truffles

  15. 2 tablespoon Julienne Of Fresh Basil

  16. 8 quarts of lightly salted water to a boil; add the

  17. tablespoons of olive oil. Add the pasta to the boiling water and cook until

  18. al dente, no morethan two minutes; drain well.

  19. Toss the pasta with the cup ofolive oil, half the basil, and salt and pepper

  20. to taste. Mound the pasta in the middle of each of 6 heated large serving

  21. plates. Sprinkle the pasta with the Parmesan Cheese. With a truffle shaver or swivel-bladed vegetable peeler, shave the truffle over each serving. Garnish

  22. with the remaining basil.
