  2. 1/4 cup butter or olive oil

  3. 2 potatoes, peeled and diced

  4. 2 1/2 cup coarsely grated zucchini

  5. 1/4 cup chopped fresh chives or green onions

  6. 4 eggs

  7. Salt and pepper

  1. In 10 inch heavy skillet, melt half of the butter over medium heat.

  2. Cook potatoes, stirring often, for about 5 minutes or until tender.

  3. Add zucchini and chives.

  4. Cook, stirring, for 1 minute.

  5. In large bowl, beat eggs lightly.

  6. Stir in vegetables.

  7. Season with salt and pepper to taste.

  8. Wipe out skillet and melt remaining butter.

  9. Pour in egg mixture.

  10. Reduce heat to medium-low.

  11. Cook, shaking pan occasionally, for about 5 minutes or until bottom is lightly browned.

  12. Cover and cook for 5 to 6 minutes longer or until top is firm.

  13. Serve in wedges.
