    2. 1/2 c Red Bell Pepper; Chopped

    3. 1 ea Red Chile; Small,

    4. 1 T Vegetable Oil

    5. 1/4 c Fresh Mint Leaves; Snipped

    6. 2 T Lime Juice

    7. 1 ea Papaya; **

    1. * Chile should be seeded and finely chopped.

    2. ** Papaya should be pared, seeded and cut into 1/2 inch cubes.

    3. ~-- Cook onion, bell pepper and chile in oil over medium heat, stirring frequently, until tender.

    4. Stir in remaining ingredients.

    5. Cover and refrigerate until chilled, about 2 hours.

    6. Makes 3 cups of relish.
