  5. 3 lb Chicken

  6. 2 c Onion; chopped

  7. 2 T Garlic; minced

  8. 2 T Lemon juice

  9. 2 ts Salt

  10. 2 ts Ginger, fresh; chopped

  11. 1/2 ts Fenugreek

  12. 1/2 ts Cardamom

  13. 1/4 ts Nutmeg

  14. 1/4 c Butter or niter kebbeh

  15. 3/4 c ;Water

  16. 1/4 c Wine, white, dry

  17. 1/4 c Berbere sauce

  18. 2 T Paprika

  19. 4 Egg; hard boiled

  20. Cut chicken into serving pieces and pat dry. Combine onion, garlic,

  21. lemon juice, salt, ginger, fenugreek, cardamom, nutmeg, and butter or niter kebbeh in a saucepan. Simmer two to three minutes. Add the

  22. water, wine, berbere sauce, and paprika. Cook briskly for three to

  23. five minutes or until sauce is the consistency of cream. Add the

  24. chicken pieces. Cover tightly and simmer 15 minutes. Pierce eggs

  25. with tines of a fork and add to the pan. Cover and cook 15 minutes

  26. more, or until chicken is tender.
