  1. 10-12 hard boiled eggs *, peeled and chopped

  2. 1/3 cup mayonnaise

  3. 2 teaspoons Dijon mustard

  4. 1/2 cup chopped fennel (about 1/2 of one large bulb)

  5. 1/2 cup chopped red bell pepper

  6. 1/2 cup chopped green onions, including the greens

  7. 1/4 cup, packed, chopped fresh tarragon leaves

  8. 2 teaspoons cider vinegar

  9. Salt and pepper to taste

  1. Gently combine all of the ingredients. Add salt and pepper to taste.

  2. Serve alone, over lettuce, on toast, or on bread for a sandwich.
