  1. 1 tablespoon olive oil

  2. 1/2 med. yellow onion , diced

  3. 1 garlic clove, minced

  4. 1 red pepper , finely diced

  5. 1 bay leaf

  6. 1 tablespoons parsley , chopped

  7. 1 teaspoon fresh thyme

  8. 2 lbs lean ground beef

  9. 2 egg s, lightly beaten

  10. 3/4 cup dry bread crumbs

  11. 1 cup ketchup

  12. 1 tablespoon Worcestershire sauce

  13. 1 teaspoons salt

  14. 1 teaspoon freshly ground pepper

  1. Preheat oven to 350°

  2. Line baking sheet with parchment paper, spray lightly with oil.

  3. Heat olive oil in skillet over medium heat. Sauté the onions, garlic and bay leaf, about 3 minutes. Add the red pepper, cook about 5 minutes until tender. Stir in parsley and thyme and cook 2 minutes. Remove from heat and allow mixture to cool. Discard bay leaf.

  4. In a large bowl combine the beef, eggs, bread crumbs, ½ of ketchup, Worcestershire sauce, salt, pepper and cooled vegetables. Use hands to mix together.

  5. Transfer mixture to center of baking sheet and form a loaf. Coat the loaf with the remaining ketchup.

  6. Bake 1-1½ hours until meatloaf is firm.
