  1. 4 tb Peanut oil

  2. 1 pn Salt

  3. 1/2ts Dark soy sauce

  4. 2 tb Light soy sauce

  5. Dry sherry

  6. 2 tb Chinese rice wine, or:

  7. 4 tb Coarsely chopped scallions

  8. 1 ts Minced fresh ginger root

  9. 2 tb Minced garlic

  10. 2 lb Cleaned, unshelled shrimp

  11. 1/4c Chicken broth

  1. + HEAT A WOK over a high flame.

  2. Add the oil, and when it is hot, stir-fry the shrimp quickly until they turn pink.

  3. Add the remaining ingredients.

  4. Continue stirring until the shrimp are cooked (about 3 minutes).
