  1. 4 1/2 cups fresh or frozen corn kernels

  2. 1/4 cup heavy cream

  3. 2 tablespoons unsalted butter Salt

  4. Freshly ground black pepper

  5. 1/2 cup chopped scallions (green parts only)

  1. Bring a medium saucepan of cold water to a boil. Add the corn, cover, and cook until just tender, 2 to 3 minutes. Remove from the heat, drain, and return to the saucepan with the heavy cream and butter. Cook and stir over medium heat until the cream is slightly thickened, about 2 minutes. Season to taste with salt and pepper. Remove from the heat and stir in the scallions.
