  1. 3 cups sifted spelt flour

  2. 3/4 cup unsweetened cocoa powder

  3. 3/4 teaspoon baking soda

  4. pinch salt

  5. 2 cups light agave syrup

  6. 3/4 cup expeller pressed safflower oil

  7. 2 teaspoons vanilla extract

  8. 2 tablespoons apple cider vinegar

  9. 1 cup water

  1. Preheat oven to 375 degrees. Combine flour, cocoa powder, baking soda and salt in a medium mixing bowl. In another large bowl, whisk together agave, oil, water and vanilla. Add in dry ingredients until smooth. Whisk in the vinegar last.

  2. Spoon batter into paper-lined cupcake molds. Bake until dry when tested with a metal skewer, 20 to 25 minutes. Frost with your favorite icing or simply dust with confectioners sugar.
