  1. 3 C Basmati or long grain rice , soaked for 10 mins and drained

  2. 1 onion , thinly sliced

  3. 1 stick cinnamon ,

  4. 1 star anise ,

  5. 1 bay leaf ,

  6. 1 sprig mint leaf ,

  7. 1 cardamom ,

  8. 1 clove

  9. 1 tbsp nuts

  10. 2 tbsp raisins

  11. 2 tbsp ghee

  12. 7 C water

  13. salt

  1. In 1 tbsp ghee , fry the spices for a min.

  2. Add the onion and saute till limp Add the nuts and raisins .

  3. One min later add the rice and mix until well coated .

  4. Add the water and salt .

  5. Once boil , cover and simmer until done and all water absorbed .

  6. Drizzle the remaining 1 tbsp ghee and fluff the rice .

  7. Serve warm with Salad with yogurt dressing and masala roasted green chilli chicken
