  1. 3 cups assorted fresh vegetables (such as small radishes, red sweet pepper slices, cauliflower florets, yellow summer squash slices, tiny pattypan squash, and/or blanched baby carrots)

  1. Directions In a medium bowl, toss together vegetables and cheese. Pour dressing over mixture in bowl. Toss to coat. Cover and marinate in the refrigerator for 24 hours, stirring occasionally.

  2. Remove vegetable mixture from refrigerator. On six 6-inch-long wooden skewers, alternately thread vegetables and cheese. Add a kalamata olive to the end of each skewer.
