  5. 1 lb Squash,yellow crookneck

  6. 1 lb Zucchini

  7. 1/2 ts Salt

  8. Pepper

  9. 6 tb Butter or margarine

  10. 1/2 lb Italian sausage,no casings

  11. 1 1/2 c Spaghetti sauce,canned

  12. 1/2 c Monterey Jack cheese,shreded

  13. 1 1/2 c Cottage cheese,low-fat

  14. 1/4 c Parmesan cheese,grated

  15. 1/4 c Bread crumbs

  16. 1 ts Butter,melted

  17. 1. Slice squash into 1/2-inch-thick pieces; sprinkle

  18. with salt and pepper.

  19. 2. Saute squash in butter in a skillet over medium

  20. heat; drain and set aside.

  21. 3. Add sausage to skillet; cook until browned,

  22. stirring until crumbly. Drain of excess fat.

  23. 4. Add spaghetti sauce to meat; simmer until

  24. thickened, about 10 minutes.

  25. 5. Layer half the vegetables, meat sauce, Jack cheese

  26. and cottage cheese in a 12x7-inck baking dish.

  27. 6. Repeat layering; top with Parmesan cheese and bread

  28. crumbs mixed with melted butter.

  29. 7. Bake in preheated 350'F. oven 30 to 35 minutes, or until bubbly. --
