  1. 1 1/4 cups 78g / 2.8oz All-purpose flour

  2. 1 cup 237ml Oat bran

  3. 1/2 cup 99g / 3 1/2oz Sugar

  4. 1 tablespoon 15ml Baking powder

  5. 1/2 teaspoon 2 1/2ml Salt

  6. 3/4 cup 177ml Milk

  7. 1/4 cup 49g / 1.7oz Butter - (1/2 stick) - melted

  8. 2 Egg whites

  9. 1 teaspoon 5ml Vanilla

  10. 2 Ripe bananas - peeled, chopped

  11. 1 cup 146g / 5.1oz Chopped pecans

  1. Recipe Instructions Preheat oven to 400 degrees. Grease twelve 1/3-cup muffin cups or line with paper muffin cups. Combine first 5 ingredients in large bowl. Whisk milk, butter, egg whites and vanilla to blend in medium bowl. Add milk mixture to dry ingredients, stirring until just combined. Mix in bananas and 1/2 cup pecans. Divide batter among prepared muffin cups. Sprinkle remaining pecans over each muffin. Bake until toothpick inserted into centers of muffins comes out clean, about 20 minutes. Transfer to rack to cool. Serve warm or at room temperature. This recipe yields 12 muffins.
