  1. 1 small clove garlic

  2. 1/2 teaspoon salt

  3. 3 tablespoons lemon juice

  4. 2 tablespoons extra-virgin olive oil

  5. 1 teaspoon honey

  6. 2 tablespoons chopped scallions

  7. 2 tablespoons slivered fresh mint Freshly ground pepper, to taste

  1. Mash garlic with salt, using the side of a chef’s knife. Transfer to a small bowl. Add lemon juice, oil and honey; whisk to blend. Stir in scallions and mint and season with pepper. Serve immediately.
