  1. Salade de Carottes et Pommes de Terre (North Africa)

  2. (Boiled Carrot and Potato Salad)

  3. Serves 6 3/4 lb (350 g) carrots

  4. 3/4 lb (350 g) potatoes

  5. Salt

  6. Juice of 1/2 lemon or more

  7. 4-5 tablespoons extra-virgin olive oil

  8. 1/2 teaspoon cumin

  9. 1 teaspoon paprika

  10. Pinch of cayenne

  11. 3 garlic cloves, crushed in a press or finely chopped

  12. Trim and scrape or peel the carrots. Peel the potatoes. Cut both

  13. into large pieces and boil in slightly salted water for about 20

  14. minutes, or until they are very tender. Drain, then cut up the

  15. vegetables, and mash them with a fork or potato masher. Beat the

  16. lemon juice and olive oil with salt, cumin, paprika, cayenne, and garlic and mix well with the carrots and potatoes.
