  1. 1/2c Dried Apricots, finely snipped

  2. 1/3c Unsweetened Apple Juice

  3. 1 c Whole Wheat Flour

  4. 2 ts Baking Powder

  5. 1/4ts Baking Soda

  6. 1/4ts Ground Cardamom

  7. 1/3c Walnuts, chopped

  8. 3 tb Vegetable Oil

  9. 1 tb Sugar

  10. 1 Egg

  1. + Directions : Soak the apricots in the apple juice for 10 minutes. Combine the flour, baking powder, baking soda, cardamom and walnuts in a bowl. Beat together the oil, sugar and egg. Add the apricots, with the juice, and egg mixture to the flour. Mix just until all the ingredients are blended. Spoon into oiled muffin tins, or paper muffin cups, filling three--fourths full. Bake in a 350-degree oven for 10 to 15 minutes, or until golden brown.
