  1. Curried Tofu and Nuts over Noodles 1 1/2 Tbsp. peanut butter

  2. 1/4 c. oil

  3. 3 Tbsp. soy sauce

  4. 1 tsp onion powder

  5. 1 Tbsp honey

  6. 1 Tbsp curry powder

  7. 1/2 tsp. black pepper

  8. 1 lb. extra firm tofu

  9. 1 cup cashews, toasted (or other nuts) Mix together the peanut butter, oil, soy, onion powder, honey,

  10. curry and black pepper.

  11. Cut tofu in bite size cubes and mix with marinade. Refrigerate

  12. for at least 1 hour.

  13. On an oiled cookie sheet spread tofu cubes and bake 10 minutes at

  14. 375 degrees. Turn tofu cubes over and bake for another

  15. 5 minutes.

  16. For sauce add about a Tbsp. of peanut butter to remaining marinade,

  17. add water until desired consistency is obtained. Correct seasoning

  18. with additional curry, black pepper and soy sauce.

  19. Mix the sauce with cooked noodles of your choice. Top with tofu

  20. and nuts.
