  1. 2-1/2 cups all-purpose flour

  2. 1-1/4 cups sugar

  3. 3 teaspoons ground cinnamon

  4. 2 teaspoons baking soda

  5. 1/2 teaspoon salt

  6. 3 eggs

  7. 3/4 cup applesauce

  8. 1/2 cup vegetable oil

  9. 1 teaspoon vanilla extract

  10. 2 cups grated carrots

  11. 1 medium tart apple, peeled and grated

  12. 1 can (8 ounces) crushed pineapple, drained

  13. 1/2 cup flaked coconut

  14. 1/2 cup raisins

  15. 1/2 cup chopped walnuts

  1. In a large bowl, combine the first five ingredients. In another bowl, combine the eggs, applesauce, oil and vanilla. Stir in carrots, apple, pineapple, coconut, raisins and nuts. Fill greased or paper-lined muffin cups two-thirds full. Bake at 350° for 20-24 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pans to wire racks. Yield: 2 dozen.
