  1. Directions Wipe meat with damp cloth or paper towel. Rub with salt and pepper. Place on roasting rack in shallow pan. Do not cover. Roast about 36 minutes per pound or to an internal temperature of 155 degrees F. for medium rare. (Meat is tenderer if slightly on the rare side.) This slow heat method conserves meat and yields about one extra serving per pound.
