  1. 1 Recipe pizza dough

  2. 1 T Vegetable oil

  3. 1/4c Shallots; chopped

  4. 10 oz Pkg frozen chopped spinach; -defrosted and squeezed

  5. 4 oz Blue cheese; cut in chunks

  6. 2 oz Cream cheese; cut in chunks

  7. 1/4t Salt; or to taste

  8. 1 lg Egg; lightly beaten

  9. 4 To 5 spinach leaves; flat -leaves, for garnish

  1. + Directions : 1. Punch down dough and divide in half. Roll each into a very thin 12" circle and using a 3" cutter, cut out 12 rounds. Repeat with remaining dough. Cover and refrigerate while you prepare filling.

  2. Heat oil, add shallots and saute, stirring, until softened, about 2 minutes. Add spinach and cook and stir 3 min more. Add cheese and cook, stiring, until cheese has melted. Taste and season with salt. You may not need to add salt. Remove mix from the pan.

  3. Brush edges of each pizza round with beaten egg. Place a generous teaspoon of filling on one half of each round. Fold in half, press to seal, and place 1 1/2" apart on lightly greased baking sheets. The calzones can be prepare ahead, covered with plastic wrap, and refrigerated for 3 to 4 hours. They can also be frozen; Wrap in plastic wrap. then foil. Defrost before baking.

  4. Preheat oven 400. Brush tops with beaten egg. Bake until golden, about 8 to 10 minutes. Remove and cool 2-3 minutes. Place a cluster of spinach leaves on a serving plate, and arrange calzones on the plate. Serve warm.
