  1. 4 (6-ounce) lamb chops

  2. 2 tablespoons olive oil

  3. 1/2 teaspoon salt - divided use

  4. 1/4 teaspoon ground black pepper - divided use

  5. 1 (8-ounce) container plain yogurt

  6. 1 lemon, juiced

  7. 1 tablespoon chopped fresh mint

  8. 1/4 teaspoon paprika

  1. Preheat broiler. Brush lamb chops on both sides with olive oil and season with half the salt and half the pepper; place on a broiler pan. Broil for about 4 minutes per side for medium-rare. Meanwhile mix together remaining salt and pepper, yogurt, lemon juice, mint and paprika; blend well. Serve lamb chops drizzled with yogurt sauce.
