  1. 1 pound top sirloin or round steak cut in

  2. 4 servings or boneless veal steak or cutlets

  3. 2 ounces Gouda or Gruyere cheese

  4. 4 slices boiled ham or proscuitto

  5. Butter/Margarine 1 Teaspoon

  6. Beef Stock 1/4 Cup (16 tbs)

  7. Red wine vinegar 1 Tablespoon

  8. 1 tablespoon each chopped parsley and chives

  9. Salt To Taste

  10. Pepper To Taste

  1. Directions Cut a pocket in one side of each steak, making an opening to within 1/2 inch of the other three sides.

  2. Season meat with salt and pepper.

  3. Slip a slice of cheese and ham inside each steak pocket.

  4. Heat a large frying pan; add butter and steak.

  5. Pan fry until browned; then turn and brown other side.

  6. Remove to a platter and keep warm.

  7. Add stock and vinegar and cook down until slightly reduced.

  8. Add parsley and chives and spoon over meat.

  9. Contains about 340 calories per serving with beef or 250 calories per serving with veal.
