  1. 2 tablespoons canola oil

  2. 2 sweet onions , large sliced

  3. 2 teaspoons ground cumin

  4. 3 sweet potatoes , peeled and cubed

  5. 1 1/2 quarts chicken broth

  6. 1 3/4 cups plain yogurt

  7. 2 tablespoons chopped cilantro

  8. 1/4 cup toasted pumpkin seeds

  1. Heat oil in a soup pot.

  2. Add onions and cumin, saute for 3-4 minutes.

  3. Add potatoes and chicken broth and bring to a boil.

  4. Reduce heat and simmer soup for 20-25 minutes.

  5. Puree soup with 1.5 cups of yogurt and cilantro.

  6. Serve each portion of soup with dollop of remaining yogurt on top and a sprinkle of the seeds.
