  1. 1kg chicken casserole pieces

  2. 1 large onion

  3. 2 carrots

  4. 2 large sticks of celery

  5. red wine

  6. water

  7. chopped fresh tarragon

  8. tsp ground sweet paprika

  9. 15 whole green cardamom pods

  10. salt and ground black pepper

  1. Peel and roughly chop the vegetables into good size pieces

  2. Brown the chicken in small batches and set aside

  3. Sauté the vegetables and add back the chicken

  4. Cover with equal quantities of red wine and water

  5. Add the remaining ingredients

  6. Bring to the boil and cover with a close fitting lid, reduce the heat and simmer for about 1½ hours - until the chicken is tender
