  1. 6 oz 170g Gorgonzola cheese - softened

  2. 1/2 cup 99g / 3 1/2oz Butter - softened

  3. 10 oz 284g Shredded extra-sharp cheddar cheese

  4. 2 tablespoons 30ml Brandy

  5. 1 teaspoon 5ml Worcestershire sauce

  6. 2/3 cup 97g / 3.4oz Chopped walnuts

  7. 1/3 cup 48g / 1.7oz Chopped fresh parsley

  1. Beat Gorgonzola and butter until light and fluffy in a large bowl with an electric mixer. Stir in cheddar, brandy and Worcestershire.

  2. Divide mixture in half. Turn each half onto waxed paper and roll, shaping into a long 1-inch in diameter. Twist ends of waxed paper closed. Refrigerate several hours until firm.

  3. Combine nuts and parsley. Roll cheese logs in mixture, pressing firmly. Roll up in waxed paper; refrigerate. Soften slightly before serving.

  4. Makes 2 logs. Can be frozen. Can also shape into a ball.
