  1. 1 1/2 pounds of chicken breast , diced in bite size pieces

  2. 1 Tbl olive oil

  3. 2 tbl butter

  4. 2 potatoes , peeled & diced

  5. 2 med carrots , peeled & diced

  6. 1 med onion

  7. 1 rib celery , diced

  8. 1 bay leaf fresh or dried

  9. salt & pepper

  10. 1 teasp poulrty seasoning

  11. 2 tbl flour

  12. 1 quart of chicken broth

  13. 1 small box jiffy biscuit mix

  14. 1/2 cup warm water

  15. parsley , chopped

  16. 1 cup frozen peas

  1. In a large pot over med heat add oil, butter, vegetables and bay leaf and cook for 5 minutes stiring frequently. Season mixture with salt, pepper & poultry seasoning. Add flour to the pot and cook for 2 min. Stir broth to the pot and bring to a boil. Add chicken & stir.

  2. Place biscuit mix in a bowl. Combine with 1/2 cup warm water & parsley. Drop tablespoons of mix in pot, spacing dumplings evenly. Cover pot tightly & reduce heat to med low. Steam dumpling 8-10 minutes. Remove cover and stir chicken & dumplings to thicken sauce a bit. Stir in peas and remove from heat.
