  1. tuna Black & Bluer With lemon & butter Sauce

  2. Good for 3 servings

  3. 3 pcs tuna Fillet, about 150g each (Ideal size: 1"x2"x3-4")

  4. 1 Tbsp Iodized salt

  5. 1/2 Tsp ground pepper

  6. 1/8 Tsp ground cardamom

  7. 1/8 Tsp ground coriander

  8. 1 Tbsp unsalted butter

  9. 1/4 Tsp olive oil

  10. For Sauce:

  11. 2 Tbsp Sweet White Wine- optional

  12. 4 Tbsp unsalted butter

  13. 1 tbsp lemon juice

  14. 1/8 Tsp lemon rind

  15. a dash salt

  16. a pinch white pepper fresh cilantro leaves for garnish

  1. ) Pat-dry the tuna.

  2. ) Combine all dried ingredients (salt, pepper, cardamom, coriander, lemon rind). In a hot pan, toast dry mixture for a minute. Put in a mixing bowl and let cool down.

  3. Rub/Sprinkle the dry mixture on both sides of the tuna fillet (just enough to cover each side). Put in a sealed container and chill for at least 15 minutes (or you can do this ahead and store in chiller).

  4. ) In a hot skillet, melt butter and drizzle oil. Sear/pan-fry tuna ( thinnest part on pan) for about a minute on each side. Put in a plate and do the same with other tuna fillet.

  5. ) After tuna are cooked, (if using wine; deglaze pan with wine, stir, and let boil, remove pan from heat)

  6. turn off heat; melt butter on the same pan, put lemon, grate lemon rind, and season w/ salt & pepper.

  7. ) Whisk sauce until derive a creamy consistency.

  8. ) Cut tuna half inch crosswise, put some sauce on top. Garnish with cilantro leaves and serve.
