  1. 1 1/2 litres fish stock or light chicken stock

  2. 3cm piece of fresh root galangal, sliced

  3. 12 banana shallots, peeled and very finely sliced

  4. 3cm piece of fresh root ginger, peeled and sliced

  5. 12 red chillies, depending on heat, sliced

  6. 4 kaffir lime leaves, torn

  7. Bunch of coriander, stalks finely chopped, leaves roughly chopped

  8. 24 lemongrass stalks, to taste

  9. 300g rice noodles, e.g. Thai rice sticks

  10. 1kg fresh clams, cleaned and well rinsed

  11. 150g beansprouts

  12. Pinch of sugar

  13. Fish sauce

  14. Juice of 1 lime
