  1. Chocolate Caramel Pecan Cheesecake (Turtle Cheesecake)

  2. 2 cups cookie crumbs

  3. 6 Tbsp butter or margerine

  4. 1 bag (14 ounces) caramels

  5. 1 can (5 ounces) evaporated milk

  6. 1 cup chopped pecans

  7. 2 pkg (8 ounces each) cream cheese, softened

  8. 1/2 cup sugar

  9. 2 eggs

  10. 1/2 cup semi-sweet chocolate chips, melted

  11. 1 tsp vanilla

  12. Preheat oven to 350F.

  13. Mix crumbs and butter, press onto bottom and sides of 9-inch

  14. springform pan. Bake 10 minutes.

  15. Microwave caramels and milk in small bowl on high for 4 - 5 minutes

  16. or until melted, stirring every minute. Pour over crust. Top with

  17. pecans.

  18. Beat cream cheese and sugar until well blended. Add eggs, one at

  19. a time, mixing well after each addition. Blend in chocolate and vanilla. Pour over pecans.

  20. Place pan on cookie sheet.

  21. Bake 45 minutes. Loosen cake from rim of pan, cool before removing

  22. rim of pan. Keep refrigerated. Garnish with whipped cream.
