  1. 4 baker potatoes

  2. 10 slices smoked salmon

  3. Fresh dill

  4. 1/4 cup cream cheese, room temperature

  5. half of a red onion, peeled and chopped

  6. 1 tablespoon grainy mustard

  7. Salt and pepper

  1. Preheat oven to 350°F.

  2. Put potatoes onto a baking sheet and bake until tender, about 1 hour. Let cool slightly and then cut the top off of each potato, lengthwise. Scrape the flesh into a bowl, leaving about a quarter inch around the inside of each potato. Add salmon to bowl along with dill, cream cheese, onion, mustard, salt and pepper and mix well. Stuff back into potato skins and place on a baking sheet. Bake until hot in centre and golden brown on top, about 20-30 minutes.
