  1. 2 cups water

  2. 5-6 tablespoons fresh orange juice

  3. 1 tablespoon olive oil

  4. 1 teaspoon finely grated orange peel

  5. 1 10 ounce box (1 1/2 cup) couscous

  1. Mix 2 cups of water, 2 tablespoons of fresh orange juice, olive oil, and orange peel in a saucepan and bring to boil. Add couscous, stir, and cover. Remove from heat. Let stand until liquid is absorbed and couscous is tender, 5 to 10 minutes. Fluff with fork and add additional orange juice by the tablespoon to taste. Season with salt and pepper.
