  7. 2 tb Water

  8. 2 tb Rice vinegar

  9. 1 tb Oyster sauce

  10. 1 tb Ketchup

  11. 1 ts Sugar

  12. 1 ea Clove garlic, crushed

  13. 2 tb Oil

  14. MMMMM--RICE DISH--

  15. 1 ea Small yellow onion

  16. 1 1/2 c Celery, cut on the diagonal

  17. 1 c Carrots, cut on the diagonal

  18. 1 c Cooked, cubed meat, any

  19. 1/2 c Red or green pepper, diced

  20. 3 c Cooked, cooled rice

  21. 1 c Sugar snap peas or snow peas

  22. Rice should be preferably a day old. Remove stems from peas. Meat

  23. can be

  24. lean chicken, turkey or pork.

  25. Combine all the ingredients for the sauce in a 2-cup mixing bowl.

  26. Stir vigorously with a fork until the sugar has dissolved. Place near the

  27. stove where it will be handy.

  28. Assemble the remaining ingredients near the stove in individual

  29. piles or dishes. Precook the carrots 1 minute in a microwave oven on high

  30. 100 percent

  31. minutes to tenderize them.

  32. Place the oil in a wok or large skillet, Set over high heat and allow oil

  33. to become quite hot. Add the onions first, stirring occasionally

  34. until

  35. they begin to caramelize and turn brown around the edges. Add the

  36. celery

  37. and stir 2 minutes longer. Add the carrots, meat and bell pepper

  38. and cook 2 minutes longer, stirring constantly.

  39. Add the rice all at once, stirring quickly to mix all ingredients.

  43. stirring.) Add the peas and pour in sauce mixture. Stir until

  44. mixture is

  45. evenly colored with the sauce. Remove from heat and serve

  46. immediately.
