  1. 4 cups plain flour

  2. 2 tsp baking soda

  3. 2 tsp baking powder

  4. 1 1/2 tsp salt

  5. 1 cup cocoa

  6. 1 cup hot water

  7. 250 g unsalted butter

  8. 2 cups caster sugar

  9. 4 eggs

  10. 2 cups buttermilk

  11. 1 tsp vanilla extract

  12. 30 muffin/cupcake cases

  13. 12 muffin/cupcake baking tray

  14. 1 cup cream

  15. 300g dark chocolate

  1. Preheat oven to 180C Sift dry ingredients together in a bowl and set aside Stir the cocoa and hot water together in a jug to make a thick paste Cream butter and sugar together in a food processor or electric beater Add eggs one at a time to mixture and blend until all combined Add buttermilk and vanilla to mixture and blend.

  2. Add cocoa paste to mixture and blend until combined Add dry indgredients to the batter until just combined.

  3. Spoon mixture into prepared cupcake baking tray. Do not over fill .

  4. Bake for 18-20 or until tops are set and a skewer comes out clean.

  5. Cool on a wire rack For Ganache/Icing Bring cream to the boil and remove from heat Add chocolate and stir until melted Dip cooled cupcakes into Ganache,decorate as you wish and allow to set.
